2 pork chops (this recipe works well with any chops, but we love thick, ~ 2” Cheshire rib chops if you can get them. We always get ours at Striplings in Bogart, GA)
2 tablespoons of olive oil
1 tablespoon of fresh cracked black pepper
2 tablespoons of Worcestershire sauce
1 medium onion cut into large chunks
10 - 12 cherry tomatoes
16 oz (1 bottle) of Patterson’s Mopping Sauce
Directions
Preheat the oven to 375 degree Fahrenheit. Drizzle olive oil on the bottom of a covered roasting pan. Place pork chops in the pan and sprinkle with Worcestershire sauce covering the surface area (this provides saltiness without adding additional salt).
Shake coarse pepper over the chops to your liking, add diced onions and cherry tomatoes on top of the chops. Pour Patterson’s Mopping Sauce liberally covering chops, onions and tomatoes.
Place the lid on the pan and put in the oven
After a bit of time, stop what you are doing to notice how great your kitchen smells……
After cooking for ~1 hour, remove and insert a meat thermometer in the thickest part of chops. When the chops reach 165 degrees, remove from the oven. Note: the cook time will be quicker with thinner chops. The good news is that they won’t dry out given their bath in Patterson’s Mopping Sauce!
Before serving, ladle some sauce from the pan and drizzle on top of the chops.
