Hasselback Potato

Hasselback Potato Recipe

Total Time: 1 hour 15 minutes

Serving Size: 1

Ingredients

  • 1 baking potato
  • 1 teaspoon of kosher salt
  • 1 teaspoon of black pepper
  • ¼ cup of melted butter
  • ¼ cup shredded cheddar cheese
  • Sour cream
  • Chopped green onions
  • Crispy bacon bits
  • ½ cup of Patterson’s Mopping Sauce

Directions (for potato)

  • Preheat the oven to 425 degrees Fahrenheit
  • Place the potato between two long, flat objects - we like to use chopsticks, but anything that will prevent you from cutting all the way through the potato will work
  • Place the potato onto a foil-lined baking sheet
  • Pour over the melted butter and sprinkle with salt and pepper
  • Bake the potato for ~55 minutes or until the center is tender (we suggest trying to insert a narrow knife into the center layers
  • When the potato is done, sprinkle with cheese and place the potato back into the oven until the cheese is melted
  • Top with sour cream, bacon and green onion, and thick mop sauce (see below)

Directions (thick mop sauce)

  • Pour the Patterson’s Mopping Sauce into a small saucepan and cook on low for 10-15 minutes, stirring intermittently to prevent sticking
