Lane’s Instant Pot Pintos with leftover ribs

Lane’s Instant Pot Pintos with leftover ribs recipe

Prep Time: 10 minutes


Total Time: ~ 45 minutes


Servings: 4


Ingredients

  • Two cups of dried pinto beans (always a good idea to soak them - we suggest for at least 6 hours, but it’s not absolutely necessary for cooking in the Instant Pot)
  • 8 oz of Patterson’s Mopping Sauce
  • 1 cup yellow onion (chopped)
  • 1 clove garlic (minced)
  • 4 cups of water
  • 2-3 leftover Bob’s Famous Ribs


Directions

  • Saute the onion and garlic in the Instant Pot (on the saute setting) until it is translucent
  • Add the beans, Patterson’s Mopping Sauce, and ribs to the Instant Pot and cover with water.
  • If you soaked the beans: cook on high pressure for 15 minutes and then let release naturally for 15 minutes
  • If you did not soak the beans: cook on high pressure for 32 minutes and then let release naturally for 30 mins
  • We like to top with chopped jalapenos - but go crazy with your toppings! You can’t go wrong with cornbread.
