Toss all ingredients together in a large bowl (note that you could add lots of your favorite other veggies in the mix as well!)
Place on a foil-lined, oiled sheet pan in an even layer. Make sure that the pieces are spaced evenly - don’t pile them up (it will cause them to steam, rather than roast).
Cook for ~35 - 40 and check them. They should be golden brown and slightly charred on top.
