Paula's Oven BBQ Chicken

Ingredients
- 2 pounds of boneless, skinless chicken thighs
- 2 tablespoons olive oil
- 1 thinly sliced medium onion
- 3 minced garlic cloves
- 3 tablespoons butter
- 3/4 cup Patterson’s Mopping Sauce
- 1 tablespoon salt
- 1 tablespoon pepper
Directions
- Preheat oven to 325 degrees
- Place chicken thighs in large bowl and add salt, pepper and half of the olive oil
- Line a 11 x 13 baking pan with aluminum foil and put in the remainder of the olive oil
- Create a single layer of chicken thighs in the dish
- Add the onions and garlic
- Add Patterson’s Mopping Sauce and mix everything together, then create an even layer of ingredients in the dish
- Cook for 40 minutes or until the internal temperature of the chicken is 165° F and the top is slightly caramelized
Notes
- Our family likes to marinate the chicken in buttermilk and hot sauce for two hours before cooking.
- We typically use chicken thighs, but this is also great with chicken breasts or whole, cut up chicken
- This chicken and BBQ “gravy” is great on top of grits, rice, or pretty much anything else.
- Use the leftover chicken for sheetpan nachos, tacos and pizza!
