Zach’s Pickled Jalapenos

Zach’s Pickled Jalapenos Recipe

Total Time: 45 minutes


Serving Size: 1 16 oz jar


Ingredients

  • 4 - 6 large jalapenos
  • 1 clove smashed garlic
  • 1 teaspoon chopped fresh ginger
  • 1 teaspoon lemon zest
  • 1 cup water
  • 1 cup rice vinegar (white vinegar will also work)
  • 1.5 tablespoons kosher salt 
  • 1 tablespoon sugar
  • 1 teaspoon cracked black pepper


Directions

  • Bring the water and vinegar to a boil and dissolve the salt and sugar - let cool.
  • Place the garlic, ginger, lemon zest and pepper in the bottom of the jar.
  • Thinly slice the jalapenos - fill the remainder of the space in the jar. 
  • Cover with the vinegar solution and place in the refrigerator.
  • The pickles will be good for a few weeks in the fridge and will be great on pulled pork sandwiches and pretty much any recipe that uses Patterson’s Mopping Sauce!


Notes:

  • For a little extra spice, we like to add a couple serrano peppers in the mix!
