Bring the water and vinegar to a boil and dissolve the salt and sugar - let cool.
Place the garlic, ginger, lemon zest and pepper in the bottom of the jar.
Thinly slice the jalapenos - fill the remainder of the space in the jar.
Cover with the vinegar solution and place in the refrigerator.
The pickles will be good for a few weeks in the fridge and will be great on pulled pork sandwiches and pretty much any recipe that uses Patterson’s Mopping Sauce!
Notes:
For a little extra spice, we like to add a couple serrano peppers in the mix!
