Serving: We provide some basic ideas below, but this chicken nachos recipe could be scaled up or scaled down based up whether you’re eating alone (at 3 am...) or having a large party
Ingredients: Nachos
- Paula’s Oven BBQ Chicken
- Tortilla chips of your choice
- Cheddar cheese
- Mozzarella cheese
- Fresh Jalapenos
- Pickled Jalapenos
- Thinly sliced red onion
- Black beans
- 1 bunch of fresh cilantro
- Salsa of your choice
- Avocado (or Guacamole)
Ingredients: Cilantro Cream Sauce
- 1 cup sour cream
- 2 tablespoons lime juice
- 1 teaspoon honey
- Hot sauce (your favorite) to taste
Directions: Nachos
- Preheat oven to 400° F
- Line a 18 x 13 sheet pan with aluminum foil (this could be any size that you have based on the number of people you plan to feed) and spray with non-stick cooking spray
- Place tortilla chips on tray in a relatively even layer
- Add Paula’s Oven BBQ Chicken
- Add cheeses and black beans to your liking
- Bake for 10 minutes our until cheeses have turned golden brown
- Remove from oven and while it is still hot, add pickled and fresh jalapenos, red onion, salsa and avocado
- Top with Cilantro Cream Sauce and fresh cilantro
Directions: Cilantro Cream Sauce
- Finely chop half of the cilantro and add to the sour cream
- Whisk in lime juice, hot sauce, and honey
