Weeknight Baked Potato with BBQ Leftovers

Prep Time: 1 hour, 20 minutes


Serving: 4 potatoes


Ingredients

  • 4 medium size russet potatoes 
  • 4 tablespoons unsalted butter 
  • 1.5 tablespoons Kosher salt
  • Pepper (to taste
  • Leftover Paula’s Oven BBQ Chicken or Slow Cooker Pulled Pork
  • Your favorite toppings!
    • We suggest: chopped green onions, shredded cheddar, butter, sour cream, but feel free to go wild!


Directions

  • Preheat your oven to 450 degrees Fahrenheit 
  • Poke the potatoes with a fork all over (you don’t want an exploding potato!) and place on a foil-lined baking sheet
  • Rub the potatoes with the butter to cover the entire surface
  • Sprinkle with salt and pepper
  • Cook until you can squeeze (with a heat-resistant towel or rag of course) and the potatoes are soft - it should take around 1 hour
  • Top with your leftover Paula’s Oven BBQ Chicken or Slow Cooker Pulled Pork and add your favorite other toppings


Notes

  • This recipe makes the potato skin crispy and delicious - don’t throw it away!
